The founder opened the first Whampoa Street store in Hung Hom in 2009, hoping to create the taste of the traditional egg puff that he remembered from his childhood, and began to develop a special crunchy skin with a soft and chewy texture inside. In order to preserve the warmth, the founder used “Mammy” as the name of the shop, which became the origin of “Mammy Pancake”.

媽咪雞蛋仔由創辦人於2009開設第一間紅磡黃埔街店,希望能做出小時候記憶中傳統雞蛋仔的味道,並開始著手研發做出特別脆感的外皮,內裡還能保有軟嫩帶有嚼勁口感的雞蛋仔,只為能夠讓自己的小孩吃到母親兒時回憶的傳統雞蛋仔,創辦人為了保留這份溫情,並以「媽咪」作為店名開始了香港紅磡第一間創始店,成為「媽咪雞蛋仔」的由來。
